I read with interest the plight of Jamil Miah who is struggling to employ staff to open a new restaurant venture, Restaurant missing one ingredient - the staff, Echo, April 23, a difficulty he ascribes to not being able to bring in qualified staff from Bangladesh or elsewhere on the Indian sub-continent.

Having lived and worked in Bangladesh, I am not aware of any training schemes such as exist in the UK for catering staff and would estimate that in the capital city Dhaka (population 6.7 million) there are fewer "proper" restaurants than in Exeter.
